New décor, chef at Cadwell’s Grille brings comfort with a twist

The words “comfort food” and “upscale contemporary” don’t usually go together when it comes to a restaurant menu, but the combination is Chef Moises Ibarra’s inspiration.

Ibarra is the new chef at Cadwell’s Grille, the Deerfield restaurant located in Embassy Suites on Lake Cook Road.

“Comfort food is traditionally heavier, more filling dishes with lots of calories,” said Ibarra, a graduate of Le Cordon Bleu College of Culinary Arts, who in the past has worked at restaurants that include Carlos’ in Highland Park, Del Rio in Highwood and The Four Seasons in Chicago. “I’m using more local flavors that are healthier and more organic, but that are still bringing that comfort feel and taste.”

Cadwell’s Grille, which is named after Jacob Cadwell, one of Deerfield’s original pioneers from the early 1800’s, opened in 2013, taking the place of Gino’s East, which was in the space for over a decade.

A year later, the owners of Embassy Suites not only hired Ibarra, but the restaurant underwent a complete remodel.

“Becoming a popular eatery for our hotel guests as well as our locals is what we are striving for,” said restaurant manager Dear Wungwattana, who holds a degree in hospitality management and has held management roles at Mundelein’s Karma, as well as the Lincolnshire Marriott and Renaissance Chicago O’Hare.

With its dark, hardwood floors, copper ceilings, dark furniture and leather chairs, Cadwell’s Grille has a modern feel, yet walls lined with old photos of Deerfield give it a warm, homey, comfortable atmosphere.

“It’s not enclosed in four walls, which gives it a lot of light, but when you walk in here, you really feel like you’re in a restaurant, not a hotel,” Wungwattana said.

On the menu at Cadwell’s Grille: soups, appetizers, salads, burgers, flatbreads, fish, steaks, and comfort foods that include braised short ribs, meatloaf, and chicken and waffles. Signature desserts include the churro ice-cream sandwich and the salted caramel sundae.

Cadwell’s Grille also offers an extensive bar menu, including small batch bourbons, single malt scotches, seasonally inspired cocktails and 25 craft beer selections.

Then there’s Cadwell’s Lounge, a large open space outside the restaurant filled with couches, fireplaces and TVs.

“It really meets the needs of young crowds, business professionals and families alike,” said Wungwattana. “It’s the kind of restaurant people wouldn’t expect to find in a suburban hotel.”

Embassy Suites in Deerfield is owned by Colorado-based Destination Hotels and Resorts, which owns an estimated 40 hotels, resorts and ski lodges. Cadwell’s Grille is open for lunch and dinner seven days a week.
